1、分段提取香茅草精油及其對(duì)食用油脂的抗氧化活性研究李曉嬌,劉憶明(保山學(xué)院資源環(huán)境學(xué)院,云南保山678000)摘要:目的:提取云南產(chǎn)香茅草精油,研究不同提餾段精油對(duì)食用油脂的抗氧化活性。方法:采用水蒸氣蒸餾法分段提取香茅精油,并以豬油和菜籽油為介質(zhì),過(guò)氧化值(POV)為指標(biāo),考察香茅精油的抗氧化活性,以BHT和BHA做對(duì)照。結(jié)果:水蒸氣蒸餾法提取香茅精油的最佳工藝為:料液比為1∶20,NaCl的質(zhì)量濃度為7g/L,提取時(shí)間為160min,總出油率為1.23%。GC-MS分析前20min和20~160min香茅精油中檸檬醛、橙花醛、橙花醇等主要成分的含量差別較大。香茅精油對(duì)豬油的抗氧化活性較
2、低。20~160min香茅精油對(duì)菜籽油有較好的抗氧化活性,與VC復(fù)合使用時(shí),其對(duì)菜籽油的抗氧化活性與BHT相當(dāng)。20~160min精油對(duì)DPPH·的清除能力較BHT和BHA差,而其總抗氧化活性與BHT和BHA相當(dāng)。結(jié)論:香茅草精油具有較好的抗氧化活性,并且精油中高沸點(diǎn)物質(zhì)的活性大于低沸點(diǎn)物質(zhì)的活性。關(guān)鍵詞:香茅草精油,食用油脂,抗氧化活性,自由基清除能力StudyonantioxidantactivityoflemongrassessentialoilbystageextractionLIXiao-jiao,LIUYi-ming(SchoolofResourcesandEnvironme
