3、talginatesarehighlycharacterisedandunderstoodbothintheliquidandinthegelphase,makesthisbiopolymeruniquecomparedtoothergellingpolysaccharides.Onlypectinsresemblealginateinthesol:geltransitionbehaviour,butthissystemcanhardlybesaidtobeaswellcharacterisedandunderstoodasthealginates.Thepropertiesofa
