1、蘭州交通大學(xué)畢業(yè)設(shè)計(jì)(論文)摘要該設(shè)計(jì)產(chǎn)品是目前國(guó)內(nèi)唯一專門針對(duì)牛肉拉面含水量高以及制作過(guò)程中揉面、搗面、甩面、順筋和出棒等過(guò)程以人工為主、勞動(dòng)強(qiáng)度大、效率低、衛(wèi)生狀況差、人員工資高等要求而設(shè)計(jì)的專用廚房機(jī)電產(chǎn)品,主要應(yīng)用在牛肉拉面館等面食加工場(chǎng)所。該機(jī)利用動(dòng)力分解技術(shù)、等距變徑螺桿設(shè)計(jì)技術(shù)和行星輪系拉扭機(jī)構(gòu),全真模擬手工制作過(guò)程,將和好的面經(jīng)過(guò)該機(jī)揉面順筋后,把面團(tuán)擠成408根粗面條,再經(jīng)過(guò)扭轉(zhuǎn)和初拉操作,提高面棒延展性,最后輸出用于下鍋前人工拉面所用的高質(zhì)量面劑子(面棒),拉面師可以用這些面劑子拉出各種粗細(xì)不同的面條。利用行星輪系結(jié)構(gòu),實(shí)現(xiàn)一對(duì)拉伸輥的自轉(zhuǎn)
2、和公轉(zhuǎn),全真模擬牛肉拉面的手工揉面過(guò)程,實(shí)現(xiàn)對(duì)面團(tuán)的順筋,輸出人工拉面前的高質(zhì)量面棒。利用機(jī)電控制系統(tǒng)實(shí)現(xiàn)機(jī)器的全自動(dòng)化運(yùn)轉(zhuǎn),整個(gè)過(guò)程不需要手工操作面團(tuán),方便、衛(wèi)生且效率高。該機(jī)體積小、功能強(qiáng),實(shí)現(xiàn)了牛肉拉面的規(guī)范化加工過(guò)程。關(guān)鍵詞:拉面機(jī);設(shè)計(jì);揉順I(yè)V蘭州交通大學(xué)畢業(yè)設(shè)計(jì)(論文)AbstractThisistheonlyproductdesignedspecificallyforthehighwatercontentofbeefnoodles,andtheprocessofmakingdough,poundface,thrownface,smoothmus
