2、,并考察了各精煉階段油脂的理化指標(biāo)及脂肪酸組成變化情況。結(jié)果表明,各精煉階段對(duì)蘿卜籽油的相對(duì)密度、折光指數(shù)、碘值和皂化值沒(méi)有顯著影響,磷脂含量、酸值、過(guò)氧化值和色澤則變化顯著。蘿卜籽油脂肪酸組成與菜籽油相似,各精煉階段組成均有變化,但是變化幅度都比較小,油脂中不飽和脂肪酸含量有所降低。精煉蘿卜籽油清澈透明,酸值、過(guò)氧化值、水分及揮發(fā)物含量等指標(biāo)均達(dá)到國(guó)家二級(jí)食用油的標(biāo)準(zhǔn),其中油脂中的不飽和脂肪酸含量可達(dá)到85%,單不飽和脂肪酸含量可達(dá)到64%。關(guān)鍵詞:精煉;蘿卜籽油;脂肪酸;理化指標(biāo)中圖分類號(hào):O623文獻(xiàn)標(biāo)志碼:AEffec

4、China)Abstract:TheradishseedsoilextractedbysupercriticalCOandn-hexanewererefinedbyalkalirefininganddeacidifying,degum-2ming,absorptiondecolorizationanddeodorizationinturn.Thephysicochemicalindexandfattyacidcompositionofradishseedsoilattherefiningprocesswereinvestiga
5、tedindetail.Theresultsindicatedthattherewerenosignificanteffectsontherelativedensity,refractiveindex,iodinevalueandsaponificationvalueofradishseedsoilthroughrefiningtreatment.Andthecontentofphospholip-ids,acidvalue,peroxidevalueandcolorchangeobviouslyattherefiningpr
6、ocess.Thefattyacidcompositionofradishseedsoilmeetthenationalstandardofcolleseedoilandtheunsaturatedfattyacidcontentwasdecreasedduringtherefiningprocess.Theradishseedsoilwasclearandtransparentafterrefining.Theacidvalue,peroxidevalue,waterandvolatilemattercontentswere
