1、適僳鮮t.34,No.18,2013冰溫結(jié)合氣調(diào)貯藏對樹莓保鮮效果的影響白麗娟,魯曉翔,李江闊,陳紹慧(1.天津商業(yè)大學(xué)生物技術(shù)與食品科學(xué)學(xué)院,天津市食品生物技術(shù)重點(diǎn)實(shí)驗(yàn)室,天津300134;2.國家農(nóng)產(chǎn)品保鮮工程技術(shù)研究中心,天津市農(nóng)產(chǎn)品采后生理與貯藏保鮮重點(diǎn)實(shí)驗(yàn)室,天津300384)摘要:實(shí)驗(yàn)采用不同厚度的PE袋包裝樹莓,貯藏于冰溫條件下,研究冰溫結(jié)合氣調(diào)貯藏對樹莓品質(zhì)的影響。結(jié)果表明,冰溫結(jié)合氣調(diào)處理使樹莓貯藏期延至20d,并有效延緩了果實(shí)可滴定酸、可溶性固形物(TSS)含量的下降,對照組15d時的可滴定酸、TSS含量分別降至1.47%、9.2%,而
2、0.04mm氣調(diào)處理組20d時的可滴定酸、TSS降至了1.58%、9.7%。但抑制呼吸強(qiáng)度、乙烯生成速率的差異不明顯。同時,氣調(diào)處理提高了樹莓過氧化物酶(POD)、過氧化氫酶(CAT)的活性,降低了多酚氧化酶(PPO)活性,延緩了丙二醛(MDA)含量的升高,延緩了樹莓的衰老。其中,0.04mmPE保鮮袋中樹莓的品質(zhì)最好。這說明適當(dāng)?shù)臍庹{(diào)結(jié)合冰溫貯藏更有利于樹莓的貯藏。關(guān)鍵詞:樹莓,冰溫貯藏,自發(fā)氣調(diào)包裝,保鮮Effectofatmospherepackagingcombinedwithice-temperatureonqualityofraspberryB
