1、現(xiàn)代食品科技ModernFoodScienceandTechnology2014,Vo1.30,No.7養(yǎng)殖暹羅鱷不同部位肌肉的品質(zhì)分析及評價(jià)肖琨,王錫昌,李夢凡(上海海洋大學(xué)食品學(xué)院,上海201306)摘要:為更好地綜合利用養(yǎng)殖暹羅鱷資源,本文從營養(yǎng)質(zhì)量、食用質(zhì)量和技術(shù)質(zhì)量三方面評價(jià)了養(yǎng)殖暹羅鱷不同部位的肌肉品質(zhì),以期為養(yǎng)殖產(chǎn)業(yè)的可持續(xù)發(fā)展提供理論支撐。結(jié)果表明:尾肉蛋白質(zhì)含量(20.25%)高于腿肉(18.70%)和體肉(18.36%),但其總氨基酸含量為70.47%,低于腿肉(72.17%)和體肉(72.58%);尾肉的粗脂肪含量(0.98%)高于腿肉(0.700/0)
2、而低于體肉(1.12%),不飽和脂肪酸比例(68.22%)顯著高于體肉(66.66%)和腿肉(64.91%),EPA與DHA總比例高于體肉而略低于腿肉;各部位肌肉富含ca、Fe元素,其中腿肉的微量元素最為豐富。通過系水力、蒸煮損失、pH、羥脯氨酸含量、肌原纖維斷裂指數(shù)(MFI)幾項(xiàng)品質(zhì)指標(biāo)檢測,發(fā)現(xiàn)呈現(xiàn)白色的尾肉嫩度最佳,紅色肉的腿肉次之,粉紅色的體肉肉質(zhì)較差;質(zhì)構(gòu)分析發(fā)現(xiàn)硬度、膠粘性、咀嚼性及回復(fù)性呈現(xiàn)腿肉>尾肉>體肉的規(guī)律以上結(jié)果表明養(yǎng)殖暹羅鱷肉是一種營養(yǎng)價(jià)值和食用價(jià)值很高的優(yōu)質(zhì)新型肉類,具有廣闊的開發(fā)前景。關(guān)鍵詞:養(yǎng)殖暹羅鱷;不同部位;營養(yǎng)評價(jià);質(zhì)構(gòu)特性文章篇號:167
