1、2802011,Vol.32,No.02食品科學(xué)※包裝貯運(yùn)殼聚糖涂膜保鮮圓脆紅棗李述剛,陳冬梅,劉華英,侯旭杰,于軍*(塔里木大學(xué)生命科學(xué)學(xué)院,新疆特色農(nóng)畜產(chǎn)品加工重點(diǎn)實(shí)驗(yàn)室,新疆阿拉爾843300)摘要:以圓脆紅棗為試材,在貯藏條件為溫度-1~0℃、相對(duì)濕度90%~95%條件下,探討不同質(zhì)量分?jǐn)?shù)(0.50%、1.00%、1.50%、2.00%、2.50%)殼聚糖涂膜處理圓脆紅棗的保鮮效果。經(jīng)70d的貯藏,結(jié)果表明:1.50%殼聚糖涂膜處理保鮮效果最顯著,其果實(shí)腐爛率低,為30.60%;質(zhì)量損失小,質(zhì)量損失率11.35%
2、;果品貯運(yùn)性能好,硬度為9.88kg/cm2;營養(yǎng)成分損失較小,其中可滴定酸含量為0.31%;VC含量為412.56mg/100g;可溶性固形物含量為22.22%。而空白對(duì)照組的腐爛率高達(dá)92%,已完全喪失果品商品價(jià)值,表明殼聚糖涂膜保鮮可以明顯延緩圓脆紅棗采后的衰老,能有效延長圓脆紅棗的保藏期。關(guān)鍵詞:圓脆紅棗;殼聚糖;涂膜;保鮮Fresh-keepingEffectofChitosanCoatingonZizyphusjujubaMillFruitsLIShu-gang,CHENDong-mei,LIUHua-yin

7、coating;fresh-keeping中圖分類號(hào):TS255.3;S665.1文獻(xiàn)標(biāo)識(shí)碼:A文章編號(hào):1002-6630(2011)02-0280-05紅棗(ZizyphusjujubaMill),又名中華大棗、大能夠提高人體免疫力,能調(diào)和及降低某些藥物的毒性和棗、華棗,是鼠李科棗屬植物棗樹的果實(shí)。紅棗營養(yǎng)刺激性,能保護(hù)肝臟,增加肌體抗衰老反應(yīng)等。可以豐富、風(fēng)味獨(dú)特,是果品中的“補(bǔ)品王”。據(jù)測定,說紅棗全身都是寶,故有“一日食三棗,終生不顯老”鮮棗含糖量為25%~35%,干棗可達(dá)60%~70%;維生之說[1-2]。素
8、含量為百果之首,平均每百克鮮果高達(dá)54mg[1];鮮棗殼聚糖(chitosan),又名幾丁質(zhì)、殼多糖、甲殼還含有蛋白質(zhì)、纖維、粗脂肪及豐富的礦物質(zhì)。另外,糖、氨基多糖、甲殼多聚糖,化學(xué)名稱為直鏈(1,4)-2-除了豐富的營養(yǎng)素以外,紅棗還含有許多的具有調(diào)節(jié)生胺基-2-脫氧-β-D-葡萄糖。殼聚糖是類似于纖維素的理功能
