2、飲料中的質(zhì)量比例、飲料中糖含量、檸檬酸含量、穩(wěn)定劑CMC含量等因素對綠豆酸奶飲料風味的影響進行了研究。結(jié)果表明:制作混合酸奶的過程中,綠豆?jié){調(diào)兌出的混合酸奶在口感和外觀上均優(yōu)于綠豆沙調(diào)兌出的混合酸奶;制作豆?jié){時,綠豆與水的比例至少在1:8以上,否則會影響酸奶飲料的口感及凝乳狀態(tài)。采用正交試驗法對于混合酸奶中豆?jié){與酸奶的質(zhì)量配比、混合酸奶與水在飲料中的質(zhì)量配比、飲料中白砂糖和檸檬酸含量進行四因素三水平試驗。試驗所選出的最優(yōu)參數(shù)為:發(fā)酵酸奶時,綠豆?jié){于鮮牛奶以1:2的質(zhì)量比例發(fā)酵成混合酸奶為宜混合酸奶與水在飲料中以1:
