1、11,2212孟憲軍,姜愛麗,胡文忠,田密霞,劉程惠(1.沈陽農(nóng)業(yè)大學(xué)食品學(xué)院,遼寧沈陽110161;2.大連民族學(xué)院生命科學(xué)學(xué)院,生物化學(xué)工程國家民委-教育部重點(diǎn)實(shí)驗(yàn)室,遼寧大連116600)摘要:以伯克利品種藍(lán)莓為試材,研究了在1℃的5%O2+10%CO2;5%O2+20%CO2和5%O2+30%CO2的箱式氣調(diào)貯藏條件下的生理生化變化情況。每20d測定一次酶促防御系統(tǒng)的酶活性、抗病性相關(guān)酶活性和非酶促防御系統(tǒng)的抗氧化物質(zhì)的含量,并測定呼吸速率、木質(zhì)素含量、果實(shí)硬度和腐爛率。實(shí)驗(yàn)結(jié)果表明:與對(duì)照相比,3種CO2濃度的箱式氣調(diào)貯藏條件均可啟
2、動(dòng)酶促防御系統(tǒng),使過氧化物酶(POD)、過氧化氫酶(CAT)和超氧化物歧化酶(SOD)的活性得到提高,同時(shí)也減慢了還原型谷胱甘肽(GSH)含量下降的速率,增加了VC含量。3種濃度的CO2處理還可有效減慢呼吸速率,抑制腐爛的發(fā)生并可有效提高木質(zhì)素含量和果實(shí)硬度,其中5%O2+30%CO2更有利于延緩衰老進(jìn)程,可使有效貯藏期延長至95d左右。研究認(rèn)為:藍(lán)莓對(duì)高濃度CO2有很強(qiáng)的耐力,高濃度CO2箱式氣調(diào)用于藍(lán)莓貯藏具有很好的保鮮效果。關(guān)鍵詞:箱式氣調(diào)貯藏,藍(lán)莓,高濃度CO2,生理生化變化Effectsofplasticboxmodifiedatm
