1、現(xiàn)代食品科技ModernFoodScienceandTechnology2015,Vol.31,No.4真菌及昆蟲(chóng)在儲(chǔ)藏小麥中生長(zhǎng)產(chǎn)生CO2氣體的特點(diǎn)郭立輝,翟煥趁,蔡靜平(河南工業(yè)大學(xué)生物工程學(xué)院,河南鄭州450001)摘要:在各種溫、濕度條件下對(duì)小麥儲(chǔ)藏期間真菌和昆蟲(chóng)活動(dòng)產(chǎn)生二氧化碳?xì)怏w(CO2)進(jìn)行監(jiān)測(cè),研究可用于判斷小麥儲(chǔ)藏安全性的方法。試驗(yàn)結(jié)果表明,儲(chǔ)糧溫度對(duì)處于生長(zhǎng)狀態(tài)的真菌產(chǎn)CO2速率影響最大,從20℃升高到25℃,產(chǎn)CO2速率可提高10倍。在安全水分小麥中,昆蟲(chóng)是產(chǎn)CO2的主要類(lèi)群,對(duì)高水分小麥,真菌是產(chǎn)CO2的主體。在產(chǎn)CO2特性方面,昆蟲(chóng)密度
2、與產(chǎn)CO2量具線性關(guān)系(r>0.99),而真菌產(chǎn)CO2呈明顯的加速現(xiàn)象,在儲(chǔ)藏初期帶菌量沒(méi)有顯著增加(p>0.05)時(shí),產(chǎn)氣速率已提高5.96倍。在大型糧倉(cāng)儲(chǔ)藏中的試驗(yàn)也表明,昆蟲(chóng)的產(chǎn)氣量恒定,糧堆4m深度昆蟲(chóng)活動(dòng)部位25d的CO2濃度變化幅度為13%,而離霉變點(diǎn)0.5m的CO2濃度變化高達(dá)37倍。因此,利用檢測(cè)CO2氣體濃度變化的方法可以靈敏地發(fā)現(xiàn)小麥儲(chǔ)藏中昆蟲(chóng)和真菌的危害活動(dòng)。關(guān)鍵詞:真菌;昆蟲(chóng);農(nóng)產(chǎn)品;小麥;二氧化碳文章篇號(hào):1673-9078(2015)4-157-163DOI:10.13982/j.mfst.1673-9078.2015.4.025Ch
