3、桑果醋醋酸產(chǎn)量的影響,并采用響應(yīng)面法優(yōu)化其主要工藝參數(shù),以獲得各影響因子與醋酸產(chǎn)量的數(shù)學(xué)模型?!窘Y(jié)果】發(fā)酵溫度和醋酸菌接種量對桑果醋醋酸產(chǎn)量有極顯著影響;發(fā)酵溫度與接種量、發(fā)酵溫度與酒精度間的交互作用對桑果醋酸產(chǎn)量也有極顯著影響。桑果醋的最佳發(fā)酵工藝條件是:發(fā)酵溫度30℃,酒精度8.55%vol。醋酸菌接種量7。16%,在此條件下桑果醋醋酸產(chǎn)量為75.95g/L,與理論值76.04g幾接近?!窘Y(jié)論】運用響應(yīng)面法優(yōu)化桑果醋發(fā)酵工藝是可行的,而且在實際生產(chǎn)中采用該工藝參數(shù),可達(dá)到節(jié)約能源損耗、縮短生產(chǎn)周期、提高生產(chǎn)效率、增加經(jīng)濟(jì)效益的目標(biāo)。關(guān)鍵詞:桑果醋;發(fā)酵工藝;發(fā)酵溫度
