2、14,29(3):286—290.‘紅仙蜜’火龍果果肉色素浸提工藝的優(yōu)化袁亞芳,趙珍珍,王威,陳清西(1.福建農(nóng)業(yè)職業(yè)技術(shù)學(xué)院,福建福州350119;2.福建農(nóng)林大學(xué),福建福州350002)摘要:火龍果色素是天然的植物源染色劑,成分穩(wěn)定且色域范圍廣闊,開展火龍果色素提取工藝研究,實(shí)現(xiàn)火龍果的綜合利用意義重大。采用經(jīng)冷凍干燥機(jī)凍干制取的火龍果果肉粉末,通過(guò)單因素再通過(guò)多因素正交試驗(yàn),進(jìn)行色素浸提工藝的優(yōu)化。結(jié)果表明,采用濃度為2O的乙醇作為提取劑,紅色素溶液顏色最亮麗,此時(shí)吸光值最大;酸性條件下有利于果肉色素的提?。粶囟?0~C時(shí),吸光值最大。優(yōu)化的最佳提取工藝為浸提溫

7、rcontrolling.Keywords:Hylocereusundatus;pigment;freeze-dry;extraction火龍果Hylocereusundatus為仙人掌科的火龍果果肉粉末為原料,通過(guò)采用乙醇為提取劑,Cactaceae植物],又名仙蜜果、紅龍果等。火并進(jìn)行浸提取工藝的優(yōu)化,可以延長(zhǎng)加工原料供應(yīng)龍果營(yíng)養(yǎng)豐富,集藥用價(jià)值和保健功能于一身,有時(shí)間,降低甜菜苷提取成本,提高甜菜苷提取得率。益人體健康l_3]?;瘕埞厥翘烊坏闹参镌慈旧瑫r(shí),凍干粉末的使用也簡(jiǎn)化了浸提工藝,為火龍果劑,成分穩(wěn)定且色域范圍廣闊[6]。目前,我國(guó)
