4、riculturalUniversity,Beijing100083,ChinaAbstract:Inordertoresearchthevariationoftobaccostemduringartificialaging,ninetobaccostemsamplesfromthreestalkpositionsandthreeareaswereartificiallyagedforoneyear.Thecontentsoftotalsugar,reducingsugar,totalnitrogen,totalalkaloid,a
5、nd5-hydroxymethylfuraldehyde(5-HMF)inandpHofthestemsamplesweredeterminedregularly.Theresultsshowedthat:1)ThepHofstemgraduallydeclinedduringaging,thoughitchangedmoreslowlyatlaterstage.2)Thecontentsofreducingsugarandtotalsugarshowedacontinuouslydecreasingtrend.3)Theconte
