1、現(xiàn)代食品科技ModernFoodScienceandTechnology2013,Vo1.29,No.10不同溫度和包裝方式對(duì)荔枝保鮮品質(zhì)的影響陸華忠,李源泉,呂恩利,楊松夏,周曉龍(華南農(nóng)業(yè)大學(xué)南方農(nóng)業(yè)機(jī)械與裝備關(guān)鍵技術(shù)教育部重點(diǎn)實(shí)驗(yàn)室,華南農(nóng)業(yè)大學(xué)工程學(xué)院,廣東廣州510642)摘要:為掌握溫度和包裝對(duì)荔枝貨架期的影響,本試驗(yàn)以“淮枝”荔枝為試驗(yàn)材料,以裸露的荔枝和由開(kāi)孔袋包裝的荔枝,分別處于常溫貨架和低溫貨架,研究不同因素對(duì)荔枝質(zhì)量損失率、褐變指教、好果率、色差、可溶性固形物含量和可滴定酸含量的影響。試驗(yàn)表明
2、:低溫貨架和包裝都能延長(zhǎng)荔枝貨架期,各品質(zhì)指標(biāo)整體衰變速度從快到慢依次為:常溫裸露、常溫包裝、低溫裸露、低溫包裝。對(duì)荔枝貨架期影響因素中,溫度占主要影響作用,低溫貨架有效的降低了荔枝各指標(biāo)的變質(zhì)速度;開(kāi)孔聚乙烯薄膜包裝也能降低荔枝品質(zhì)的衰變,該影響小于貨架溫度的影響。常溫貨架無(wú)包裝的荔枝好果率在30h變?yōu)?,低溫包裝荔枝的好果率在60h仍保有9.20%。與常溫貨架荔枝裸露的銷(xiāo)售方式對(duì)比,采用低溫貨架并由開(kāi)孔聚乙烯薄膜包裝可以使荔枝貨架期延長(zhǎng)一倍以上。該文為荔枝貨架期保鮮研究提供了參考。關(guān)鍵字:荔枝;貨架;包裝;品質(zhì)
