1、※基礎(chǔ)研究食品科學(xué)2008,Vol.29,No.0781低劑量γ輻照對(duì)牛肉肌內(nèi)脂肪酸組成及牛肉質(zhì)量的影響陳銀基1,周光宏2,鞠興榮1(1.南京財(cái)經(jīng)大學(xué)江蘇省糧油品質(zhì)控制及深加工技術(shù)重點(diǎn)實(shí)驗(yàn)室,江蘇南京210003;2.南京農(nóng)業(yè)大學(xué)教育部肉品加工與質(zhì)量控制重點(diǎn)開(kāi)放實(shí)驗(yàn)室,江蘇南京210095)摘要:取8頭黃牛的半腱肌,在60Co源下輻照,劑量分別1.13,2.09及3.17kGy,牛肉在7℃環(huán)境下儲(chǔ)存10d,評(píng)估不同輻照劑量和儲(chǔ)存時(shí)間(0d或10d)條件下肌內(nèi)脂肪酸組成及牛肉質(zhì)量的變化。肉樣儲(chǔ)存10d后,未輻照的肉樣中SFA和MUFA含量比未儲(chǔ)存未輻照的牛肉(
2、0d,0kGy)顯著上升,而輻照過(guò)的肉樣SFA和MUFA含量基本不變。輻照后多不飽和脂肪酸(PUFA)、n-3PUFA、n-6PUFA含量和P/S顯著下降(0d或10d)。不同輻照劑量對(duì)脂肪酸的影響差異不顯著。輻照后0d,牛肉樣滴水損失及TBARS與輻照劑量呈正相關(guān),隨著輻照劑量的增加(從0kGy到3.17kGy),滴水損失及TBARS逐步升高;而10d儲(chǔ)存后,滴水損失和TBARS則與輻照劑量呈負(fù)相關(guān)。輻照后牛肉樣細(xì)菌總數(shù)隨輻照劑量的增大顯著下降。牛肉肌內(nèi)脂肪脂肪酸組成和比值因輻照而產(chǎn)生變化,而輻照劑量的增加(1.13kGy到3.17kGy)對(duì)脂肪酸組成沒(méi)有
