2、理可以顯著提高豆渣中水溶性膳食纖維(SDF)含量,其提高效果隨著離子液體陽離子基團(tuán)的延長而減弱,含乙酸根的離子液體的提高效果優(yōu)于含氯離子的離子液體。1-乙基.3-甲基咪唑乙酸鹽的效果最好,可將豆渣中SDF含量從最初5.97x10。g/g提高到0.17g/g,SDF/IDF比值從0.17提高到0.69。離子液體處理改變了豆渣中SDF和IDF的單糖組成,豆渣的微觀結(jié)構(gòu)因溶脹而變形,結(jié)晶結(jié)構(gòu)遭到破壞。離子液體處理后,豆渣膳食纖維的持水力增加10%,持油力增加16%。離子液體可作為提高豆渣中SDF含量,改善豆渣膳食纖維水
